Pumpkin Ravioli with Caramelized Onions and Brown Butter Sauce

 Trader Joes put out these fresh pumpkin raviolis that I was dying to try. I bought them and ended up freezing them because I didn't want to use it right away. Last night I decided to thaw it because all of the amazing pumpkin flavors from the fall have gone away from my favorite stores (bye bye Pumpkin latte, butternut squash ravioli, etc.)

I wanted to make something similar to Bonefish's pumpkin ravioli meal but I was not going to buy Swordfish because of the cost. I was ok with making a vegetarian meal, but my boyfriend wanted some kind of protein. We decided on chicken breast because it is cheap, and I have a lot of it.

 Ingredients:

2 medium onions
6 Tbs butter split
3 chicken breasts ( a little less than a pound. You don't need that much if you want the pasta to be the star)
1 lb of pumpkin ravioli
2-3 Tbs fresh Thyme
Salt and Pepper to Taste
1 Tbs Curry
1/4 c of goat cheese or feta cheese
1/8 cup chopped walnuts

Directions:

1. Melt 2 Tbs of butter on the stove top while you cut your onions into thin strips. 


2. Place onions in melted butter and sprinkle with salt. (If you don't have time to caramelize, you can also sprinkle with some sugar and it will go a little quicker but won't be as good.)

3. Cut up chicken into thin strips that won't over power your ravioli. 


 4. I used 2 packages of the Trader Joe's Honey Roasted Pumpkin Ravioli but you can use whatever squash flavored ravioli that you want. Cook in salted water for the directed time.

 5. You want the onions to be a melty brown so cook the onions on low for about 30 min.
6. When your pasta is done, melt the remainder of the butter. When the butter is nice and hot place place the thyme and walnuts into the butter. Stir consistently until brown.










7. Mix all cooked ingredients together with the goat cheese on top (this way it melts amazingly). Serve immediately.









Pros: The flavors were good. I liked the pumpkin with the onions and goat cheese.

Cons: I would have preferred not to include the chicken because it was too heavy for the light ravioli. Trader Joe's pumpkin ravioli was a little too deserty which goes well with the savory but it was not what I expected. Does not make good leftovers!

Overall: I will make it again but not with Trader Joe's Pumpkin Ravioli.
