I always try to buy and make "just enough" so I don't have to worry about too many leftovers but I often crash and burn with this task. Therefore, tonight I am making leftover Pot Roast Sandwiches. When I Googled the idea, I found a lot of choices.
This website made me in awe and made my mouth water....it also told me that if I am going to be serious about my blog I need to step up my picture game...
This website also looked good, and a lot easier.
They were good starting off points for me. I knew from looking that I wanted a sandwich that is warm. I knew that I didn't want to throw away the already cooked onions (that would be a waste!)....and I am lazy on a weeknight. Plus, I now knew the basics to this sandwich. I need to have cheese, something wet (au ju, mayo, butter, etc.), good bread, and of course the beef.
SOOOOO...I decided to make a HOT pot roast with melted provolone cheese and a horseradish aioli sandwiches.
Instructions: Mince garlic very fine.
Have you ever used one of these stones? I have no idea what its made of and what it is called, but it helps get rid of the horrible garlic smell on your hands. It works amazingly!
Combine the minced garlic with 1 large egg yolk.
Then slowly mix in 3/4 cup of olive oil.
SLOWLY....this way the egg yolk thickens up....Do you see the difference between the picture above and the picture below...I went too fast and it was a sloppy mess.
So..lets start over!
Also didn't work...so I finally went to a leftover rice bowl (I think its made out of metal). I call it a leftover rice bowl because it is the bowl in a rice cooker..and we broke two and kept the bowl.
Mix the yolk-garlic-olive oil mixture with 1 tablespoon of lemon juice and 1 tablespoon of horseradish. While you are finishing up the aioli, take the leftover meat and onions and place on top of a good roll. Warm up the bread, meat, and provolone cheese in a toaster oven BEFORE putting on the aoili.
Spread that aoili that you worked so hard to create and enjoy!!!!
Pros: What an arm work out! I messed up a lot and you have to beat furiously so my right arm is now surprisingly strong.
Cons: The aoili had an olive oily taste to it so I can't use it as a dip for my french fries, but it was delicious on the sandwich.
Overall: Good taste, but not worth the effort unless you are trying to impress someone.
