While the chili was warming back up I made some AMAZING cornbread. Some people make cornbread from scratch....I'm too lazy...plus I have never had a bad cornbread from Jiffy.
So...I mixed together the Jiffy ingredients as per the box's directions. Then added 1/2 cup of cheddar cheese, 1 Tablespoon Cayenne Pepper and 2 Tablespoons of honey. I used Cheese Honey...I don't know how it is different then regular honey but it seems thicker and sweeter.
I used the Reynolds wrap foil cups, because I am currently in between muffin pans.
Bake like normal (look at the Jiffy Box for temperature and time.) I did have to cook it 5 minutes longer then the directions indicated.
I put the cornbread in the bottom of my chili bowl.
Then ladled 1/2 cup of chili and topped with sour cream and cheese.
IT WAS AMAZING!!!!
The cornbread was delicious. When you bit into it you would find pockets of sweet and spicy. Went really well with the flavorful chili.
Pros: I was able to make a meal in under 30 minutes with minimal effort. I was able to clear out the freezer and use all pantry staples.
Cons: None that I can think of.
Conclusion: You have to try it. I don't know if it is the venison or the recipe itself but this is the best chili I have ever had and the best cornbread I have ever had. I will make this again!
